Don't worry, living hedgehogs are in no danger. It’s just that cutlets with rice are called that because of their external similarity to these cute animals. On the finished cutlets, the protruding rice resembles hedgehog needles. The result is a very satisfying and tasty dish. You can cook the minced meat yourself or buy it in the store. Just take a proven version from a manufacturer you trust. From the presented amount of ingredients I got 8 medium cutlets.

The recipe includes:

Minced meat (preferably beef or with the addition of beef), 500 g
- onions, 1 pc.

We prepare minced meat according to, or buy it in the store. Pour the rice into a saucepan, fill with cold water so that it rises above the rice by about 1 cm. Place on high heat. Bring to a boil, turn down the heat. After 7-10 minutes the rice is ready. It is not necessary to boil it completely; it is better if it is slightly undercooked.

While the rice is cooking, you can cut the onion into small cubes.

Mix the rice thoroughly with the minced meat. It is more convenient to do this by hand. Add raw egg, salt, pepper, herbs.

We make a ball from the minced meat, you can flatten it a little, and roll it in flour.

Heat vegetable oil in a frying pan and fry the hedgehogs over high heat on one side.

Turn the cutlets over, reduce the heat, and fry for 15-20 minutes. If they start to burn, you can add a little water.

  1. Pork and onions are turned into minced meat and salted. A loaf of bread, pre-soaked in cold milk, as well as an egg yolk are added to the mass. Crushed garlic is also added to the minced meat to taste.

  2. Chopped vegetables are sautéed until cooked, after which minced meat is added to them. Together the products are fried for 10-12 minutes. Next, the mass is salted and sour cream (2 tablespoons) is added to it.
  3. Place half of the puree on an oiled baking sheet. It is sprinkled with grated cheese. The filling is distributed over the first part.
  4. The future casserole is covered with the second part of the potatoes. It is also sprinkled with grated cheese on top and greased with the remaining sour cream.

  4. The tomatoes are filled 2/3 with the resulting mass, after which they are laid out in an oiled baking dish. You can pour a little water with tomato paste on its bottom.
  5. The blanks are closed with “lids” cut off earlier.

The dish is baked in the oven for 40-45 minutes.

Ingredients: 780 g minced meat, onion, 1 raw and 3 boiled eggs, a handful of breadcrumbs, 160 ml cream, 80 g cheese, salt.

Combine minced meat, bread squeezed out of milk and remaining quail eggs. Add salt and pepper to taste.


Mix the minced meat into a homogeneous mixture with your hands.


Divide it into 6 parts. Form each piece of minced meat into a small flat cake.


Place a shelled quail egg in the center of each flatbread.


Pinch the edges of the meat cake, beat the cutlet thoroughly with your hands, and sculpt the body of a hedgehog.


Make 5 more small animals in the same way. Use black peppercorns to create noses and eyes for the hedgehogs.


Note: it is very important not to forget to remove the peppercorns immediately before eating the cutlets.
