There are many ways to prepare such products. We decided to present you the most accessible and simple ones. For example, vegetarian cutlets made from mashed potatoes are very tasty. To prepare them we will need:

  • table salt and crushed black pepper - use to taste;
  • large potatoes - 5 pcs.;
  • fresh country egg - 1 pc.;
  • full fat milk - ½ cup;
  • natural butter - 2 small spoons;
  • refined oil - used for frying cutlets;
  • fresh dill - several sprigs.

Preparing the base

Vegetarian ones are pretty easy to make. To begin with, vegetables should be peeled, then cut in half, put in a pan, add water, salt, bring to a boil and cook for half an hour. Next, you need to drain all the broth from the dishes. After adding chopped pepper, milk, butter and a raw egg to the hot potatoes, mash them into a puree using a masher. You should also add chopped fresh dill and chopped sweet onions to the base.

Forming and frying process

Having received thick and aromatic mashed potatoes, you can safely form vegetarian cutlets. To do this, take the vegetable base in your hands in the amount of 1.5 large spoons, and then roll it into a ball and flatten it a little. Next, the products need to be rolled in breadcrumbs and placed in a frying pan with boiling oil. The cutlets must be fried on both sides until browned.

How to serve?

After all the vegetarian cutlets have been fried, they should be distributed on plates and presented to the table. It is advisable to eat this dish with bread and some kind of sauce. By the way, some chefs serve mashed potato products to the table as a side dish for meat or sausages.

Making vegetarian lentil cutlets

Vegetarian cutlets can be made using a variety of vegetables. However, the most delicious and satisfying products are obtained using cereals and legumes.

So, vegetarian ones are made using the following ingredients:

  • green lentils - about 250 g;
  • short grain rice - ½ cup;
  • sweet onion - medium head;
  • large fresh carrots - 2 pcs.;
  • breadcrumbs - a full glass;
  • table salt, ground pepper, coriander - use to taste;
  • Sunflower oil - for frying cutlets and vegetables.

Making the base

If you want to make lentil cutlets, you will have to pre-treat the product with the base. To do this, you need to sort it out, wash it well, fill it with drinking water and leave it in the room overnight. During this time, the lentils should swell well and become soft. Next, place it in a blender bowl and blend until you obtain a homogeneous paste.

After processing the main product, you need to move on to cooking rice. It needs to be washed and boiled in boiling salted water.

As for carrots and sweet onions, they should be peeled and chopped with a grater and a knife, respectively. Next, the vegetables need to be fried in vegetable oil.

Finally, all products (lentil paste, boiled rice, sautéed onions and carrots, spices) must be placed in one container and then mixed thoroughly.

Forming and frying products

Vegetarian cutlets should be formed in exactly the same way as regular meat products. To do this, you need to pick up the base in the amount of 1.5 large spoons, and then make a ball out of it and flatten it slightly. Before frying in a frying pan, all semi-finished products must be rolled in breadcrumbs.

Serve for lunch

Having made lentil cutlets, they should be placed on a plate and served along with some sauce or salad of fresh vegetables. If desired, this dish can also be used as a side dish.

Made from buckwheat

Vegetarian ones turn out very tasty and satisfying. To prepare them at home, you will need the following products:

  • buckwheat - a full glass;
  • filtered drinking water - 2 glasses;
  • any fresh mushrooms - 700 g;
  • sweet onion - medium head;
  • table salt, ground pepper - use to taste;
  • greens (dill, parsley) - to taste;
  • breadcrumbs - a full glass;
  • sunflower oil for frying cutlets and vegetables.

Preparing the base

First you need to prepare the base for the cutlets. To do this, you need to sort out the cereal, rinse it thoroughly, and then put it in a saucepan, add water and cook for half an hour. During this time, buckwheat should transform into a thick paste. Next, you need to cool it and grind it in a blender.

To make vegetarian cutlets tasty, you should definitely add fried mushrooms and onions to them. To prepare them, you need to heat them in a frying pan and then add both ingredients. They need to be fried over medium heat for about 20 minutes.

After the mushrooms and onions are cooked, they should be added to the buckwheat gruel, seasoned with spices and chopped herbs. After mixing the ingredients, you should get a viscous mass. If it does not hold the shape given to it, then you can additionally add one raw egg to the base.

How to shape and fry a dish?

The principle of formation and heat treatment is the same as in previous recipes. After the products are cooked, they must be placed on plates and then served to family members along with sauce and fresh salad. Bon appetit!

  • 200 ml green lentils
  • 150 ml rice (round or jasmine)
  • 1 carrot (optional)
  • 3 tbsp. spoons of vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon asafoetida
  • 1 tbsp. spoon of flour

Bouillon:

  • 300 ml water
  • spices: 2 tsp. ground coriander, 1/2 tsp. ground bay leaf, 1/3 tsp.
  • 1/3 teaspoon salt
  • 1 tbsp. spoon of ghee (or other)

How to cook vegetarian cutlets:

  1. Wash green lentils and soak overnight.

  4. And grind it using a blender along with 3 tbsp. spoons of vegetable oil. (If you cook without carrots, then vegetable oil should be added to the minced meat).

  6. Grind it using a meat grinder or blender. (You can also make delicious ones from the resulting mass.)
  7. Add carrots and rice, as well as salt, asafoetida and flour. Mix well. The minced meat for vegetarian cutlets is ready.

  8. Place the frying pan on the fire and heat the oil. We make balls from the minced meat and place them in a frying pan. Fry a little on all sides. Fill with water and add coriander, asafoetida, bay leaf and salt. Bring to a boil and cook for 25-30 minutes. If the water has boiled away, add water so that the cutlets do not burn.

Bean cutlets

We will prepare these vegetarian dietary cutlets from dry beans (2 tbsp.). You will also need root vegetables (3 onions and 1 carrot), seasonings, salt and 2 tbsp. vegetable oil. Semolina (4 tbsp) will help thicken the minced meat.

After soaking the beans for 10 hours in cold water, fill them with fresh water and cook until softened. Grind the cooled beans with a blender or meat grinder. Add semolina, spices, mix well, let stand for 20 minutes. Peel the vegetables, chop them, fry them in vegetable oil (you can add garlic at this stage). Transfer the vegetable mass to the minced meat, stir. Form cutlets with wet hands, roll in breadcrumbs and fry in vegetable oil.

Pea cutlets

To prepare the cutlets you will need 1 tbsp. yellow peas, shallots. Also take seasonings (turmeric, ground pepper). Soak the peas for several hours, boil, cool and chop. Add chopped onion, seasonings, salt. Form cutlets and deep-fry.

Lentil cutlets

To prepare this dish, take equal parts of pre-cooked, pureed lentils and chopped white cabbage using a food processor (proportion – 1:1). Combine both products, add soda (at the tip of a knife), salt, season with ground pepper, asafoetida, cumin, coriander. If the mass is not thick enough, add ground oatmeal. Form cutlets, fry in vegetable oil.

Carrot cutlets

To prepare carrot cutlets, use 2 tbsp. grated carrots, chopped onion, mashed boiled beans (1 tbsp.). Mix these ingredients, add herbs, salt, ground pepper, a little whole grain flour (to obtain the optimal minced meat consistency). Roll the formed cutlets in breadcrumbs and fry.

Buckwheat cutlets

Vegetarian cutlets in the oven are prepared without fat - they can easily be classified as medical nutrition. Cook buckwheat (you will need 2.5 tbsp. ready-made porridge). You also need eggs (2 pcs.), chopped green onions, seasonings, salt, a small amount of flour. Combine all ingredients and form cutlets. Place them on the prepared baking sheet. Bake in a preheated oven for about 20 minutes (180 degrees). If you like juicy cutlets, you can bake them by adding a small amount of water to the pan.

Cabbage cutlets

Chop a small head of cabbage, pour boiling water over it for 1 hour, then strain the liquid. Chop the onion, fry in vegetable oil, add to the cabbage, season, thicken the mass with semolina (3 tbsp). Roll the formed cutlets in flour and fry.

Beet cutlets

To prepare these cutlets, boil the beets (you will need about 1 kg of root vegetables). The remaining ingredients of the dish: egg, salt, garlic, seasonings and 100 g of semolina.

Grate the root vegetables or chop them in another way, drain the excess juice. Contrary to tradition, when preparing the dish, use a boiled egg rather than a raw one (grate it, add to the beetroot mixture). Add seasonings, semolina, and crushed garlic there. Form cutlets, fry in vegetable oil or steam (takes 10 minutes).

Vegetarian cutlets go well with both porridge and vegetable side dishes. In most cases, they are low in calories, which is an additional advantage.
