In short, there are a huge number of cabbage rolls recipes and each of them is good in its own way, so I want to offer you my favorite cabbage rolls recipe - lazy cabbage rolls with chicken. The peculiarity of this recipe is that not raw minced chicken is used to prepare the dish, but boiled chicken. The recipe is really very lazy, these cabbage rolls are as simple as possible to prepare. It turns out very tasty!!!

Compound:

  • Boiled chicken meat – 600 g (I used chicken legs, but you can use absolutely any part of the chicken)
  • Cabbage – 2/3 of a large head of cabbage
  • Rice (preferably round) – 1 cup
  • Onions – 2 pcs.
  • Tomato paste – 3 teaspoons
  • Dried dill - to taste
  • Ground black pepper - to taste
  • Salt - to taste

Preparation:

If you don't have boiled chicken, boil it. To do this, boil water in a deep saucepan and place the pre-washed chicken in it. I usually use either chicken breast or chicken legs for lazy cabbage rolls. Both are cooked for 20 minutes. There is no need to salt the chicken.

Cool the finished chicken directly in the broth in which it was cooked, so it will be softer. Then remove the chicken from the broth, separate it from the bones and finely chop it with a knife. Do not pour out the broth, but leave it for another dish, for example, you can cook a very tasty rice soup, here is the recipe: .

Peel the onion and cut into small cubes. Heat a little odorless vegetable oil in a frying pan and fry the onion until soft and lightly browned for 10-15 minutes. Stir the onion periodically to prevent it from burning.

Wash the cabbage and cut into cubes. Add the cabbage to the fried onions and simmer for 20 minutes, stirring occasionally.

Then add tomato paste and mix it with cabbage and onions.

Wash the rice and place it in an even layer on top of the cabbage.

Pour hot boiled water over the rice so that the water slightly covers the rice. Cover the pan with a lid and simmer the contents for 25 minutes over low heat until the rice is completely cooked. There is no need to stir the rice during cooking, otherwise it will burn. If the water boils away quickly, add a little more.

5 minutes before the rice is ready, add the chopped chicken.

Making lazy cabbage rolls with chicken.

Step 1: Preparing Ingredients

We wash the chicken fillet under running water and remove the chaff and veins on a cutting board. Cut the meat into medium pieces. We pass it through a meat grinder, using a medium-sized mesh. The minced meat for lazy cabbage rolls according to the classic recipe should not be very small, but not large either.

Then you need to boil two liters of water in a saucepan. We clean the cabbage from damaged leaves, cut off the stalk, and rinse under running water. Shake the head of cabbage over the sink to get rid of excess liquid. Place on a cutting board and chop finely: 5 millimeters long and 3 millimeters wide. Place the cabbage in a saucepan with boiling water. Let it sit for about 15 minutes, it should become soft. Then drain the water and add the flakes to the cabbage, mix the ingredients.

While the cabbage is steeping, you can use your free time to peel the onions and carrots. We wash them under running water along with the dill. We pass the carrots and onions through a meat grinder and divide the resulting mass into two parts. Add one half to the minced meat, and put the second half in a separate deep bowl and set aside. We will need these ingredients a little later.

Place the dill on a cutting board and finely chop it, add it to the cabbage and flakes.

Step 2. Mix the ingredients

Add the prepared minced meat to the bowl with the flakes and cabbage. In a deep plate, beat the eggs with a fork until fluffy foam appears (about 3 minutes). Pour the mixture into the bowl with the ingredients.

Season everything with salt and pepper to taste. This is a classic recipe for lazy cabbage rolls. But you can add your favorite spices and herbs to the dish.

Add sifted wheat flour to the total mass and mix all ingredients until smooth.

Step 3. Fry lazy cabbage rolls from minced chicken

Turn on the stove at medium level. Pour vegetable oil into the frying pan. With wet hands, form small minced chicken cutlets for lazy cabbage rolls. Place them on a hot frying pan. Fry the lazy cabbage rolls with chicken on both sides until a beautiful golden brown color appears. It is not necessary to fry the products until fully cooked.
Place the fried cutlets on a plate. Do not remove the pan from the stove yet and do not drain the oil.

Step 4. Gravy for lazy cabbage rolls with minced chicken

In the frying pan in which we fried the cabbage rolls, place the onions and carrots (the second part), simmer them for 3 minutes until transparent. Stir constantly while frying, as these roots burn very easily. Then add 200 ml to them. water, tomato paste, sour cream, mix.

Salt the gravy to taste, do not forget that the minced meat has already been salted.

Step 5. Stewing cabbage rolls

Place lazy cabbage rolls with minced chicken into boiling gravy. Simmer the dish over low heat for 40 minutes, be sure to cover the pan with a lid. Simmer until fully cooked. Stuffed cabbage rolls will acquire a special taste if you fry them in butter.

Lazy cabbage rolls are an express version of traditional cabbage rolls; they turn out no worse, they just look and are prepared differently. A good sauce for cabbage rolls is made from tomato and sour cream, in which they are pre-stewed. With such gravy, even the most banal side dish turns into a delicious dish...

Let's start preparing lazy cabbage rolls with minced chicken, vegetables and oatmeal porridge for breakfast.

  • 400 g chicken fillet__NEWL__
  • 60 g round rice__NEWL__
  • 1 large onion__NEWL__
  • 1 carrot__NEWL__
  • 200 g white cabbage__NEWL__
  • 1.5 tsp. salt__NEWL__
  • spices to taste__NEWL__
  • vegetable oil for frying__NEWL__
  • 20 g butter__NEWL__
  • 1.5 tbsp. tomato paste__NEWL__
  • 200 ml sour cream__NEWL__
  • bay leaf__NEWL__
  • peppercorns__NEWL__

Take chicken meat. This can be fillet or pieces of chicken, from which you then cut off the flesh. Rinse the meat and trim off any membranes and bones.

Rinse the round rice, add two parts water and add salt. Cook until soft, about 20 minutes.

Peel the onion and cut into 2-3 parts. Place the pieces of meat and onions in the bowl of a food processor and chop. You can also make minced meat using a meat grinder.

Now add a fresh chicken egg, salt, and spices to the minced meat. Stir and then transfer the finished minced meat into the pan.

Peel and wash the carrots, wash the cabbage and cut into pieces. Place in a food processor bowl and grind into fine crumbs.

Melt a piece of butter in a frying pan. Place vegetable crumbs from cabbage and carrots into the pan and sauté for 4-5 minutes. This will imbue the vegetables with a creamy flavor and make them tastier.

Remove the cooked rice from the pan and cool. Long grain rice can also be used for cabbage rolls. Add fried vegetables and round boiled rice to the pan with the minced chicken. The stuffing for cabbage rolls will consist of these components.

Stir with a spatula until smooth. You can taste it for salt and spices if you don’t mind eating raw meat.

Heat vegetable oil in a frying pan. With wet hands, take a ball of minced meat and give it an oblong shape, place it in a frying pan.

Fry the cabbage rolls on both sides for 2-3 minutes, there is no need to bring them to readiness, a golden brown crust will be enough.

Place the fried delicious cabbage rolls into the pan as tightly as possible. Now we have to simmer the cabbage rolls in aromatic gravy.

The gravy is prepared from sour cream, tomato paste (tomato juice) and a small amount of water, 150-200 ml. You want the sauce to almost completely cover the cabbage rolls. Also add peppercorns and bay leaves to the saucepan.

So, to begin with, as usual, what we need:

1. chicken (I used half a chicken weighing 1.5 kg) or chicken fillet (450-500g)

2. cabbage - 200g

3. bow - 1 piece

4. rolled oats - half a glass

5. eggs - 1-2 pieces

6. sour cream or mayonnaise

7. ketchup or tomato paste

and not included in the photo:

8. carrots - 1 piece

9. greens (I had dill)

10. salt, spices

First, let's look at the chicken. Separate the meat from the bones and skin and pass through a meat grinder or grind in a food processor. I don’t have a meat grinder, so I chose the 2nd option for myself. By the way, if you make this dish from chicken breasts, the cutlets will turn out drier. So I take the meat of half a chicken + add a little fat from the sides :)

Add chopped cabbage and rolled oats. Mix everything again

We form cutlets from this mixture with wet hands and place them in a frying pan. Fry the cutlets over high heat in vegetable oil until golden brown, turn over

After the cutlets have browned, pour the sauce over them:

1 tbsp. mayonnaise or sour cream (I like it better with sour cream, but this time I didn’t have it),

1 tbsp. ketchup or tomato paste (I like it better with paste, with sourness),

Reduce heat, cover with a lid and simmer for 20-30 minutes.

Serve with fresh vegetables

BON APPETIT!
