2. Then cool the baked vegetables a little. Now we need to grind them. To do this, take a blender or some kind of chopper. I use an old food processor for these purposes.



He copes with this task with ease. Place the resulting mass in a saucepan, and pour in the vegetable juice released during baking from the baking sheet. Place on the stove and cook.



3. As soon as the vegetable mass in the pan begins to “puff”, carefully add salt, ground black pepper, tomato and sugar. The tomato is needed to acidify the caviar a little, but I don’t add sugar at all, it tastes better without it :-)


4. Cook the squash caviar under the lid. It “puffs” unexpectedly and strongly, and can not only splash everything around, but God forbid, get on the cook and cause a burn. Therefore, we clearly control this stage. Cooking time over moderate heat is no more than 20 minutes.

Then remove the pan from the heat, add chopped dill or parsley and chopped garlic. Mix everything, cover with a lid and let it brew for 30 minutes.
