We collect young garlic arrows. We go through them and cut off the dry ends. Wash well and dry on a paper towel.

Cut the arrows into sticks, 3-5 cm long.

  • Dried red hot pepper pieces (can be chopped)
  • Half a large onion

  • Doshida seasoning - 1 tsp
  • Chicken broth seasoning - 1 tsp
  • Soy sauce - 1 tbsp. l
  • Vegetable oil - 1 l (for deep frying)

Preparation

Don't let the abundance of ingredients scare you. It only seems like a lot at first glance. But if you purchase all the necessary seasonings once, everything will turn out to be very simple.

Cut the ginger and sweet pepper into strips. Carrots - into slices. Chop the onion into half rings. We cut the arrows with chopsticks 5 cm long.

Crush the garlic cloves with a knife, this will make it easier to chop them into small pieces.

Cut the boiled beef into strips.

Add spices to the meat cubes - 1 tsp chicken broth, 1 tsp Chinese Doshida seasoning, then sprinkle the meat with starch on top.

It will allow the spices to adhere well to the meat and maintain its structure during deep-frying. Mix it all with your hands.

Prepare a saucepan with high sides and pour oil into it.

How to check that the oil is ready for frying: dip a wooden spatula into it; if the oil is hot enough, it will begin to bubble and squeak around the spatula.

Place the beef in the pan.

Fry until nicely brown and remove with a slotted spoon.

Next, the garlic arrows are sent into the deep fryer, for about two minutes with constant stirring, and removed in the same way with a slotted spoon.

Further cooking will be done using a frying pan with high sides or a cauldron.

There we will fry the remaining vegetables.

Ginger goes into the pan first, followed by chopped garlic cloves, onion half rings, carrots and sweet peppers, dried hot pepper pieces (or chopped).

Everything is fried until light golden brown, after which we add the garlic arrows, which we deep-fried, and the meat.

Add 1 tbsp to vegetables and meat. l soy sauce. And leaves of cilantro or parsley (if you don’t like it, you don’t have to add it).

Place the hot salad on a plate and serve.

Garlic arrows with beans

A rustic, tasty and simple recipe.

Ingredients

  • Arrows - 250 g
  • Canned white beans - 1 can
  • Tomato paste - 2 tbsp. l
  • Water – 200 ml
  • Olive oil - 2 tbsp. l
  • Sugar
  • Black peppers
  • Khmeli-suneli seasoning
  • Greenery

Preparation

Cut the garlic pipes into 1.5 - 2 cm pieces.

Fry them in a frying pan until dark olive color and add tomato paste.

Pour in a glass of water and simmer them for 10 minutes.

We wash the beans from the can and place them in a frying pan. Add the indicated seasonings to taste.

Let's mix. Simmer for another 15 minutes under the lid. And you can serve it to the table. It's also delicious served cold!

Be sure to take note of this recipe. It goes perfectly with many home-cooked dishes: pasta, meat, fish, for baked vegetables, for appetizers on the holiday table, and just to spread on bread, as your imagination dictates!

Ingredients

  • Garlic arrows – 500 g
  • Zest of 1/2 lemon
  • Green basil - 50 gr
  • Parmesan cheese or other hard varieties – 200 g
  • Salt – 1 tsp
  • Olive oil – 3 tablespoons
  • Lemon juice - 1-2 tablespoons
  • Ground black pepper – 1/4 teaspoon
  • A glass of shelled walnuts/pine nuts

Preparation

Sort out the arrows, rinse and dry on a paper towel. Next, take a blender or meat grinder and grind them.

We also send nuts and basil there for company. Grate the cheese and lemon peel on the finest grater.

Mix all the ingredients together: basil puree and garlic cloves with nuts, lemon juice, zest, cheese, salt, olive oil.

Knead until the mixture acquires a uniform consistency. If it turns out too thick, you can add more oil.

This recipe is similar to the previous one, but the difference is that this option is more suitable for spreading on bread.

This is truly a herb-enriched oil with the aroma and taste of young green garlic. Ideal for preparing light snacks!

Ingredients

  • 100 g butter
  • 4-5 pieces of garlic arrows
  • 20 g dill
  • 6-10 drops lemon juice
  • salt to taste

Preparation

Get the oil in advance. It should soften at room temperature.

Grind the garlic and dill into small pieces in a blender.

Mix them with oil, add lemon juice, and add salt.

Mix the whole mass thoroughly and place it on cling film.

Using a roll mat, form a block of butter and roll the ends on both sides like candy.

Ingredients

  • Young garlic arrows - 1 kg
  • Water for marinade - 1 l
  • Fine salt - 1 tbsp. l with a slide
  • Sugar - 2 tbsp. l
  • Vinegar (9%) – 70-100 ml
  • Bay leaf and peppercorns

Preparation

Cut the washed and dried pipes into pieces 4-6 cm long.

We prepare jars in advance where we will roll our snack.

We offer an easy way to prepare jars: wash each of them with soda and a new sponge on all sides. Then pour boiling water into them about halfway.

Let it sit for 3-5 minutes, steam will rise from the boiling water and thus they will be sterilized.

Then we chat the boiling water in the jar and pour it from different sides. The jars are ready!

The lids from them are also well washed and poured with boiling water for 3 minutes.

Now that everything is ready for rolling, let's start cooking the marinade.

Pour a liter of water into the pan. Add salt and sugar, peppercorns and bay leaves to it, bring to a boil.

Immediately add the arrows into the marinade and cook them for 3-5 minutes so that they are soft and tender later in the appetizer.

Use a slotted spoon to remove them and place them in jars.

Turn off the boiling marinade and pour vinegar into it, stir. If you don’t really like vinegar, add it in a smaller dosage. But you can’t do without him completely, it won’t work out that way.

Pour the finished marinade into jars.

  • Use arrows that are not too young and not too old. An overripe plant will be harsh and unfit for consumption.
  • When choosing a plant, be guided by the diameter of its arrows. The best option is stems with a diameter of 5 mm - they are still soft. We must not miss this moment.
  • Be sure to sort through all the raw materials - cut off the lower parts of the stems and the thickenings (buds) that form at the top. Also discard any yellowed stems.

Rinse the selected antennae thoroughly in cold water. Then lay them out on a paper towel and let them dry.

We know a lot about the benefits of garlic. But what do we know about the garlic shoots that grow during the ripening of this bulbous plant, bloom and produce seeds? We usually try to pick them quickly because the arrow takes away the strength from the garlic that is needed to form a strong bulb. But don't rush to remove this greenery. It turns out that garlic arrows taste very good and are healthy, the main thing is to know how to prepare them. There are many recipes according to which you can prepare a product for the winter, crushed with a blender or meat grinder.

The benefits of garlic arrows and rules for collecting them for harvesting

Garlic shoots are the stems that hold the peduncle. If you let them grow for a long time, they will bloom into gorgeous flowers that will produce seeds the following year. But you can forget about the harvest of large and strong garlic bulbs: the plant spends too much energy on providing for offspring. That is why it is customary to trim the arrows so that the yield does not decrease by 20–50%. This is especially important in hot, dry summers, when the access of moisture with nutrients to the roots of garlic is difficult.

But it should be noted that garlic arrows are not much inferior in taste and benefits to its bulbs! They contain:

In addition, the younger the arrows, the higher their content of iodine, calcium, carbohydrates, phosphorus and chlorine. Therefore, chopped garlic arrows, fresh, frozen or canned, can become not only an excellent seasoning for first and second courses, but also a therapeutic and prophylactic remedy for the whole family during the cold season.

But to benefit from garlic arrows, you need to collect them correctly and in a timely manner. Winter garlic shoots appear a little earlier than spring garlic, but in general this occurs at the end of June. It is very important to collect the arrows by mid-July, before the flower stalk begins to bloom. This way they will remain soft and tender without becoming too hard.

Scientifically speaking, the arrows need to be cut off in the curl phase, which has reached a length of 10 cm. Collect them together with the inflorescences, shortening them with scissors or pruners at a distance of 12–15 cm from the axil of the last leaf.

Note! Under no circumstances should you pluck, pull out or twist the garlic arrows when removing them. From such actions, cracks are formed in the flower stems, through which pathogens penetrate into the bulbs. After this, the garlic crop will not be stored for long.

Garlic arrows can even be used to control pests of garden plants by preparing a rich infusion from them. But we suggest using them for culinary purposes, preparing a tasty and healthy seasoning for the winter.

Recipes for preparing chopped arrows

There are several ways to prepare garlic arrows. You can save them:

  • entirely;
  • cut into cubes;
  • chopped rings;
  • ground to a pulp.

We offer several recipes from the latter category. To process garlic arrows, you will need a meat grinder or blender.

The simplest way: a product with salt and vegetable oil

What could be more pleasant when preparing a dish takes a minimum of time and you only need a few ingredients? For this paste you will need:

  • 500 g garlic arrows;
  • 0.5–1 tsp. salt;
  • 1.5 tbsp. l. vegetable oil.

If you have very young shooters, you can use them together with peduncles. It will be enough to cut off the ends from them.

Cooking process:

  1. Cut the arrows into 3-4 cm pieces and place them in a blender bowl.
  2. Grind the product as much as possible.
  3. Add salt and vegetable oil to the mixture and mix well. Oil is needed to soften the garlic paste, and salt is needed to prevent souring.
  4. Transfer the paste into a convenient container (for example, a plastic container with a tight-fitting lid) and put it in the refrigerator.

Storing in the refrigerator is appropriate if you plan to use up the garlic paste within a month at most. If you intend to prepare for a longer period, it is more correct to do this: put the mixture into plastic bags (measured no more than 200 g in each, to make it easier to defrost later) or baking dishes and place in the freezer, where the seasoning can be stored until spring.

Canned Garlic Paste

Chopped garlic arrows can be stored not only in the refrigerator or freezer. They can also be preserved by distributing them into portioned jars. Since the seasoning from garlic arrows turns out to be quite spicy and is added to dishes little by little, it is better to take small containers for it, no more than 0.5 liters in volume.

You will need the following products:

  • 250 g garlic arrows;
  • 1 tsp salt;
  • 5 tbsp. vegetable oil.

Cooking process:

  1. Remove dry ends from the arrows. If the flower stalks are still soft and tender, feel free to leave them.
  2. Cut the arrows crosswise into 2 parts - this will make it easier to place them in the meat grinder pipe.
  3. Install a grid with large cells on the device. Pass the garlic arrows through the device and place the resulting mass in a bowl or deep plate.
  4. Add salt and pour in vegetable oil. It is advisable to use refined one; its smell will not overwhelm the aroma of garlic.
  5. Mix the mixture thoroughly and transfer it to a suitable size pan.
  6. Simmer for about 8 minutes over medium heat, stirring constantly, so that the paste boils thoroughly and the oil is saturated with the smell of garlic.
  7. Scald the prepared jars and their lids with boiling water.
  8. Immediately place the seasoning in a container and roll it up.
  9. Allow the jars to cool at room temperature, then store in the pantry or basement.

This garlic seasoning can be stored until spring. When you uncork a jar of chopped garlic arrows in winter, remember: you need to store it in the refrigerator in the future so that the product does not sour. ANDIt is advisable to consume the seasoning within 3–4 weeks. And don't forget about the smell of garlic: close the jar tightly when you put the container back in the refrigerator.

You will need:

  • 1 kg garlic arrows;
  • 1 tbsp. with a heap of coarse salt;
  • 1 tsp ground black pepper;
  • 1 tsp ground coriander seeds;
  • 50 ml cold pressed vegetable oil.

If desired, you can add other seasonings that you often use.

Cooking process:

  1. Take the garlic arrows and wash them in cool, salted water.
  2. Dry, cut off the hard parts, chop the soft arrows finely with a knife.
  3. Place the chopped pieces into a blender bowl. Grind, adding salt and seasonings, pour in vegetable oil. The mass should not turn out thick, but it should not spread either.
  4. Stir the chopped arrows until the mixture resembles a green sauce.
  5. Rinse and sterilize jars thoroughly.
  6. Place the prepared caviar in containers and cover tightly with clean lids.

It is allowed to store the snack in the refrigerator or any cool and dark place for up to six months, because garlic itself is a good preservative, and salt in the mass will extend the shelf life of the product.

Add a little caviar to a vegetable salad with fresh herbs to give it a spicy taste and aroma.

Preparing snacks with nuts

Since we're talking about spicy tastes, shouldn't we turn to the peculiarities of Caucasian cuisine? Garlic arrows are also common ingredients in dishes. In tandem with walnuts and seasonings, they will become an excellent sauce for deli meats.
